I don't know about "real" meatballs, but these were so easy to make--I was shocked! I guess I just thought that many "from scratch" recipes typically take all day to prep and assemble, but these took me about 18 minutes from chopping to table!

While there are plenty of vegan meatball recipes out there on the interwebs, these are definitely my favorite recipe so far. I started with Max La Manna's "Meatless Mushroom Meatball" recipe and then tweaked it from there to add in more plant-based protein and simplify some of the seasonings (aka use what I had in my pantry). I also made these in my air fryer (naturally lol...have you seed my air fryer recipes yet?!) and they turned out amazing! Crispy on the outside and moist on the inside.

I love how simple, clean, and nutritious these are--and filling! Give it a go and let me know what you think!
