Blueberry Lemon "Cheesecake" Balls





I wasn't always a good cook. It took a LOT of trial and error. Like most things in life.


So for everyone out there who says they can't cook, KEEP TRYING. Something will catch you and you WILL find your flow.


And it will be worth it because your life will be better for it.

Blueberry Lemon "Cheesecake" Balls

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀: 6-8 medjool dates, pitted ½ cup raw cashews, chopped ½ cup raw almonds, chopped 1 Tbsp warm water 2 Tbsp lemon juice ¼ cup dried blueberries ¼ cup oats ¼ cup coconut flakes 𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀: Using a food processor, blend dates and water together until a chunky paste begins to form. Add all ingredients (except coconut flakes) to a standing mixer (or mix with your hands or a large spoon). Once ingredients are well combined, divide mixture into 1 Tbsp pieces and roll into individual balls.⠀ Place coconut flakes into a shallow bowl and roll date balls until fully covered in coconut. Store in the fridge for up to 2 weeks!
