Air fryers: If you don't have one, what are you waiting for?! Yes, I am THAT person...the one who can't stop talking about her air fryer (...that she got two years ago...) I mean, have you seen my Tofu Bacon recipe or my Vegan Jalapeño Poppers? All made in the air fryer and so delicious!

So in an effort to not only keep my air fryer addiction at a healthy HIGH, but to also get some extra servings of veggies in my diet, I started making carrot the (you guessed it!) AIR FRYER!

Okay, real talk: these are super quick to make (10 mins!) and you can season them however you want. But I really think I've found the magic mixture in salt, pepper, paprika, and parsley.
