This is one of my most requested recipes from friends and family...so I added it to my recipe book! However, I originally didn’t have this recipe on the docket for the book. Even though this is one of the recipes that I make most often, it somehow didn’t make the cut! After chatting with a few friends about my process for creating this book, they demanded I add this recipe in here after trying it a few times themselves. I couldn’t believe I almost skipped out on one of my most beloved recipes!
What I love most about this recipe is that it’s versatile. While I may have given you the play-by-play of what to put in these stuffed peppers, please feel free to get creative and try new fillings for your own vegan stuffed peppers: taco filling, Mediterranean ingredients, ice cream...okay, kidding.
Honestly, you can use whatever you want: dried cranberries, popcorn, vegan chocolate chips, leftover Christmas cookies, dried cereal...anything that sounds good to you + chocolate!
