I don’t know about you, but I love overnight oats. One thing that makes this quick breakfast so awesome is that is amazing for gut health. The prebotic fiber in soaked oats is great for feeding your gut bacteria and supporting better digestion.

I just don’t love that most recipes require dairy. So I made this recipe completely vegan, adding in vegan soy yogurt, almond milk, and vegan protein powder. I also made a quick chia raspberry jam to extra sweetness and OH MY GOSH these are so good!

I typically make 5 servings to get me through the week and they last pretty good in the fridge. So creamy and filled with good fiber and so good for IBS sufferers like myself when dairy doesn’t agree with you.Recipe
