I am a firm believer that pretty food tastes better. There's just something psychological about diving into a good looking plate and *believing* every bite will be delicious. I am also sure I've thought about this concept more than most people...

But purple potatoes are something to behold. I am amazing with how vibrant their natural color is...and when added to a dish, it just lifts the whole thing right up!

For this recipe, the garlic obviously takes center stage once you take your first bite, though. Let me be clear: if you are not a fan of garlic, this dish might have to be modified for's intensely garlic-y and delicious.
