You know when you make a big life change and then like halfway into it, you think: Oh shoot, I didn't think of XYZ? Here, let me give you an example: I went dairy-free (then eventually full vegan) a few years ago. About six months into my dairy-free journey, I had a terrible realization: I wasn't able to have mozzarella sticks or jalapeño poppers anymore (insert all of the crying emojis).

Finally, I figured out a way to make one of these gooey snacks vegan (still working on mastering the other...)!

What I love most about this recipe is that they are made in the air fryer and only take 10 minutes!! Honestly, I think these taste better than any deep fried version because you actually taste the jalapeño. They are spicy, creamy, and oh so good! Pair with a side of vegan ranch and dig in!
