I know we've all been down the Pumpkin Loaf path before. Because in Fall (aka the first leaf to fall after Summer), it's #pumpkineverything, am I right? But have you ever wanted something else that was just pumpkin bread and wasn't exactly banana bread? No? Just me?
Well, I got to thinking about all of the amazing flavors around all holiday foods. Gingerbread cookies were one of the first that came to mind, but I really wasn't in the mood for making more cookies that I would be eating alone (my husband isn't a huge fan of sweets, so it's using a part of one over here when it comes to cookies and treats).
With that, I figured out a way to make a sweet bread that tastes like a gingerbread cookie...and it's vegan :)
