vegan / sugar-free / oil-free
I'll make this quick and straight-forward: these are BOMB. I've been craving a good blueberry muffin, but really didn't want to eat dessert for breakfast. Don't get me wrong, the concept of cake before 9am sounds like the ultimate dream life, but I will undoubtedly crash within 45 minutes of consumption.
So instead, I made an oil-free, sugar-free version of a classic...all while keeping it vegan! And no, it's not crumbly or dry...these are (dare I say...) MOIST and fluffy and just the right amount of sweetness.
