As a vegan, it can be tough seeing some of your favorite non-vegan foods fly by on social media...like overnight oats.
Oh, you've never heard of them?! Well let me tell you: Overnight oats are all the rage these days.
Basically, someone figured out a way to "make" a whole grain food without even having to cook it. And it's freaking delicious.
The main ingredients in overnight oats are usually rolled oats, greek yogurt (which is the non-vegan culprit), some type of liquid (milk, cream, etc), and whatever flavorings and fillings you'd like to spice it up with.
Well after pouting to myself for long enough that I could "never" have overnight oats again after going dairy free, I quickly put on my big girl pants and figured out a just as good (if not better...hehe) vegan version to this delicious breakfast.
Enter: my favorite [vegan] overnight oats concoction:
Vegan Brownie Batter Overnight Oats
(Makes 5 servings)⠀ 1/2 can full-fat coconut milk 3/4 cup warm water
2 Tbsp flaxseed 1 1/4 cup rolled oats 3 Tbsp cocoa powder 1/4 cup maple syrup Vegan chocolate chips Extra oats (for topping) Mix all ingredients in a large bowl (except extra oats). Whisk together well. Portion out into 5 small mason jars. Top each jar with extra oats (about 2 Tbsp). Store in the fridge for up to 5 days.
